*Roasted Apple Crisp ala Dale Hawkins, Executive Chef

Apples—whether or not they are in pie--are as American as you can get.  We have an orchard here on the Resort property that we are restoring that is more than a hundred years old.  In fact some of the local historians say it may well have been around when Stonewall Jackson himself was hiking through these mountains near his home at Jackson’s Mill only 15 miles north of here.
That orchard was my inspiration and it convinced me that our signature dessert should feature apples.  The apples in this crisp are baked the way my grandmother did hers—there’s no sugar added; she caramelized them in their own natural fruit sugars. I developed the recipe after I visited the Bruderhof—it uses their granola and then I made some adaptations of my own—the lavender whipped cream.
Hope you enjoy this New Appalachian favorite.  Dale Hawkins, Exec. Chef, Stonewall Resort.

* Michelle Luddy, Harpist:  an artist of Randolph County, has her work rooted in love of nature.  First a landscape painter, whose work can be seen in Clarksburg and Petersburg,  her musical credits include Forest Festival entertainment and playing local venue restaurants like Nella Cocina's, and Gracelands as well as  private receptions.  She plays traditional Celtic music and light baroque classical compositions on a gut strung lever harp.   Although Michelle's painted and played music all her life, only recently has she evolved "Glissande Perfumes", a natural perfume company and website( www.glissande.com), which focuses the use of aromatherapy into the fine art of making perfumes for creative enjoyment and therapy.
* Joan E. Beard, M.A.  Eureka Herbs:  Joan has been identifying, growing, using and giving presentations on wild edible and medicinal plants for over 25 years.  She creates medicinal herb profiles (research-supported uses) for various medical conditions and does consultations for both individuals and groups.  Joan gives slide programs and workshops that include organic growing and medicinal uses of wild edible plants.  She also identifies these plants for owners of gardens, farms and woods.  As a developmental psychologist, she gives research papers at international conferences and on diverse themes at film and literature colloquiums.  She's an occupational therapist in private practice and a Master Gardener as well.
