a Tour of the lavender growing at La Paix.

Geoff Kraus entertains a fascinated audience with
his Lavender Crème Brule, Lavender Fair 2004. He left me a
large dish of the crème Brule which I hid from others in the kitchen
successfully. However, when I snuck it out in the late hours and took it
to my bedroom to eat in lascivious comfort, the taste was
so entrancing that I ate it all - my taste buds were bigger
than my tummy - not a good thing!
Dale Hawkins, Executive Chef of Stonewall Resort, demonstrated his Lavender
Chicken recipe at the Fair in 2004.
He returns as the Chef in 2005 and will give two demonstrations.
The first has not been decided on, but the second, at the
end of the day, will be on Cooking with Wild Mushrooms
and Wild Edibles. Samples will be for sale.

Paul Goland of Hardscrabble Enterprises
gave a workshop on Growing Shitakes and a Wood Walk on Identifying Edible Wild
Mushrooms at the 2003 and 2004 Fair. He will be giving the same popular

eggs
2 Cups Sugar
1/2 Cup butter
1/2 Cup Crisco
1 Cup Real sour cream
2 tsp. baking powder
1 tsp. baking soda
real vanilla extract 1 tsp.
1 1/2 Cup flour
1/2 tsp. almond flavoring
1. Mix all together.
2. Refrigerate 2 to
3 hours.
3. Roll out and cut
with small cookie cutter.
4. Place bottom
cookie on greased cookie sheet.
5. To Dot's SMOKE
CAMP CRAFT Lavender
jelly add 1 tsp.
sweet
sherry
6. Stir jelly and add cake or food coloring to color it
lavender.
7. Then place about 1/2
to 1 tsp. jelly on top of
each bottom
cookie.
8. On the top cookie,
cut a small slit in the
shape of an L.
9. Place the top to
the bottom cookie and
press to seal.
10. Beat one egg white
with 2 tsp. of sugar
till mixed but not
foaming. Brush this
over each cookie
and sprinkle with fresh lavender buds.
Bake 375 for about
7 to 8 minutes.
Judge's comment:
"Not only a wonderful
taste but a beautiful
cookie"

Lavender Cookie Contest Rules
The Third Annual Lavender Fair & More, held
at La Paix Herb Farm in Lewis County, West Virginia on Saturday, June 25th,
2005 announces the Third Annual Lavender Cookie Contest. Contestants are
asked to bring their cookies and the recipe for judging to the Fair. Judges,
including Don Garvin, former President of the West Virginia Environmental
Council and seasoned cookie judge, Elaine Ferry R.N. West Virginia Herb
Association, Leah Deitz, Staff Writer, The Inter-Mountain News, and Bryan
Sobel, Apprentice, La Paix Herb Farm will determine the winning cookie based on
presentation, flavor, texture and originality.
Contestants are hereby warned that Deaonna Crowe, the Lavender Cookie winner
of 2004, has already created a new recipe featuring three luscious
ingredients. So create your recipe and make it bling!

1-l/4 cup
flour
2 Tablespoons lavender flowers
1 teaspoon baking powder
pinch salt
1/2 cup Butter - softened
3/4 cup sugar
1/2 teaspoon almond extract
1 egg
1.
Combine dry
ingredients and set aside.
2. Cream butter
~ add sugar,
extract & egg.
3. Add dry to butter
mixture ~
1/2 at a time.
4.
Chill until firm.
5. Make 1 inch ball ~
roll in sugar.
Bake 12
minutes at
350 degrees or until
lightly brown.
Drizzle with frosting
and top with almond
if desired.
Makes 36.

The First West Virginia Lavender Fair
was a
one day event on Saturday, July 12th, 2003. About 200 participants
savored the
delicious food catered by Dale Hawkins, saw an essential oil
distillation, made lavender wands,
saw a slide show of lavender
in France
and West Virginia and enjoyed many booths featuring lavender
and herbs.
They strolled the many gardens of
La Paix and relaxed under umbrellas
dotted throughout the
grounds on a beautiful balmy sunny day. Many
found peace
in the Labyrinth and on the paths through the
woods. Maureen Rogers of the Herb Growing and Marketing Network
spoke
on the Uses of Lavender
Essential Oil. Music by
"Unsound" a local alternative band featured William Nicoll Hale
III, the lead singer.
A Lavender Cookie contest was held - the
winning recipe is featured on this page (see above).
An excellent radio production made by
Jean Snedegar, Stringer for NPR and British radio was so
well received
that the
steward of La Paix, and the many helpers at the Fair decided to
plan an even larger
Fair for 2004.

DIRECTIONS TO LA PAIX
HERB FARM
From Interstate I 79, take
Exit 99, turn left toward Weston to Route 33 west. Travel about
fifteen miles
on Rt. 33 West.
When you have traveled approximately
thirteen miles, you will note the Alum Bridge Elementary School
on your
left.
Keep going another two miles to Crooked Run Road on your left.
The sign for Crooked Run is on
your right.
Turn left
on Crooked Run.
There will be signs posted along 33 and Crooked Run to aid your journey
to
the Fair.
Go up Crooked
Run 2-l/2 miles to a mailbox on your right
which says La Paix Farm.
Turn left (it is the first left hand turn
on Crooked Run) and go another mile to La Paix Herb Farm
at the end of the
road. There will be people directing parking as you enter La
Paix.
